ARTISAN FRESH PASTA · FLORENCE

The authentic taste of fresh pasta

Tradition, experience and carefully selected ingredients...

The authentic taste of carefully crafted pasta

Fresh pasta is one of the most authentic symbols of Italian culinary excellence: a heritage of flavours and know-how passed down through generations, telling the story of our cuisine.

Behind every pasta shape is a careful process that brings together tradition and modern production techniques. From the selection of flours and semolina to the potatoes for gnocchi and the ingredients for fillings, every raw ingredient is carefully selected and processed.

1990

A story that began in Sesto Fiorentino

Gnocchi and polenta production began in 1990 under the guidance of the Paoletti and Innocenti families.

From a small production facility with just three employees and mainly local distribution, Pastaio Fiorentino grew over time thanks to the popularity of its products and the arrival of new team members. Today, the company continues on this path, staying true to tradition while looking to the future with an increasingly organised production operation.

Starting out in a small facility with 3 employees, today we have over 50 years of experience in the food industry.

Fresh pasta

Classic shapes and filled specialties, born from the meeting of selected ingredients and fresh pasta-making tradition.

Choosing quality Italian pasta means choosing the security of sealed packaging that protects the product, which is subject to rigorous hygiene and safety checks and regular inspections to ensure full compliance with current regulations. This daily commitment brings the authentic, wholesome flavour of home cooking to the tables of consumers in Italy and abroad, as well as to professional kitchens, celebrating the inestimable value of Italian-made food every day.

Quality starts with the ingredients

Ingredients are prepared daily to ensure freshness and quality. Every step is carefully overseen, from selecting the raw ingredients to packaging.

Thanks to pasteurisation, products retain their characteristics and have a stated shelf life of up to 20/25 days from production, without preservatives, depending on the specifications for each product.

Finished products and raw ingredients are regularly checked for quality to ensure compliance with current food hygiene regulations.

Carefully selected ingredients, prepared every day to ensure the freshest product from the moment the dough is made.
