Since 1990, a Florentine story

Our story is steeped in tradition

From a small facility in the Osmannoro area to a business that continues to grow: for over thirty years, we have pursued our passion for fresh pasta and Tuscan culinary tradition.

A family story of pasta and place

Since 1990, Pastaio Fiorentino has carried on a tradition rooted in Tuscan cuisine, growing while staying true to its origins.

It all began in 1990

It all began in 1990 in the Osmannoro area of Sesto Fiorentino, guided by the Paoletti and Innocenti families and their passion for Tuscan culinary tradition.

The story began in a small production facility, with a team of just three employees serving the local market. Carefully selected ingredients for potato gnocchi and polenta.

Late 1990s: growth

Growing appreciation for the authenticity and freshness of our products has led to significant business growth.

As production capacity grows, so does our team: the small artisan workshop becomes a more structured, dynamic business.

Tradition and the future

Today, drawing on more than fifty years of combined experience in the food industry gained by its founders, the company continues to look to the future with the same enthusiasm as when it began.

Pastaio Fiorentino’s journey represents the perfect meeting point between respect for age-old traditional recipes and the adoption of modern production and quality control standards, with the aim of bringing the authentic flavour of Tuscan fresh pasta to tables in Italy and around the world.
